I was recently offered the chance to get involved in a fantastic food competition with Villa Plus. Myself and 9 other bloggers were given the task of recreating a recipe from the destination we were allocated – these destinations included The Algarve, Cyprus, Lanzarote, Corfu and Majorca.
I was allocated The Algarve and since Steve hates seafood, we decided to give the Broa Castelar a whirl instead – with our own little twist! I must admit the idea of sweet potato cookies didn’t appeal to me at first but after further research, I found out that people love them the world over. Who knew?
Due to the choice of recipe, it was quite hard to pick up many local ingredients and had to resort to the local supermarkets for the majority of them. These cookies are easy to make no matter where you are – as long as you have an oven with a hob, you’re good to go! This means these would be a perfect recipe to make whilst staying in a self catering villa!
Broa Castelar with peanut butter
Serves 4-6
Costs: £4.97 (Cost PP: 82p-£1.24)
You will need:
– 700g sweet potatoes
– Two tablespoons of breadcrumbs
– 250g corn flour
– 250g plain flour
– 150g grated coconut
– Three eggs
– One orange rind
– 300g sugar
– Two egg yolks for brushing
and our special ingredient –
– 5 tablespoons of smooth peanut butter
Our friend also suggested adding some marshmallow fluff in to see what it was like – we tried it with a very small batch and you couldn’t taste it so peanut butter was definitely the way to go!
Once cooled, add all the remaining ingredients minus the flour and two egg yolks. Place on the heat again and mix well until once again, the mixture boils. Now add the flour. Once mixed, this should be of a smooth thick consistency. Pour the mix onto a floured sheet and leave to cool.
Once cooled, the cookies are ready to be moulded. This is where you spoon your peanut butter in, ensuring it spreads evenly throughout the mixture. Traditionally, Broa Castelar is made into cone shapes but we thought we would try some simple circular and heart shapes. Brush with the beaten egg yolks and place in the oven at 180°C for 15-20 minutes. These should look golden brown when cooked.
These can be eaten hot if you just cannot wait or can be left to cool – it’s your choice!

I've heard of sweet potato brownies too… It seems so bizarre. But I'll definitely have to try it out to see for myself. 🙂

I like the idea of sweet potato in cookies, I have used carrot, beetroot and both work well in sweet foods. I bet they were better than a savoury dish with sweet potato in. #pastandpresent
