Meal Planning Monday

I’m really getting into meal planning now. I am becoming more confident in the kitchen (I usually leave the harder stuff to Steve) and it has been nice having more of a variation with our meals. Since it is Meal Planning Monday once again, I thought I would bring you what we are having this week.

As I always write my meal plan on a Sunday, you will see what we had yesterday at the top of my meal plan. It was amazing. I did most of the cooking but Steve added some salt, pepper, mixed herbs and a little bit of cranberry sauce before leaving it to pan fry for a little longer. It was delicious!

So what is on the meal plan for this week?

Now I realised that I have a lot of sausages in the freezer so I want to try and use them up.

Tonight will be pasta bake and I am considering using up my frankfurter sausages in that as Jack will love it.

Tuesday is toad in the hole..I have never made it from scratch so wish me luck!

I have a ton of rice in the cupboard but it isn’t something we use very often so I am thinking a turkey or chicken korma for Wednesday night.

Steve gets paid on Thursday so this may change (we might have a cheeky takeaway but I doubt it!) but right now, I have planned in slow cooker beef. Not sure what I will be putting with it but I know I will enjoy it.

Friday is the day I have gammon steaks planned for myself and Steve, something different for Jack. I already have some gammon steaks in the freezer but I also have some coming in my Waitrose delivery as I took advantage of the meal for 2 for £10! Yum! Not too sure which gammon I will choose yet though.

Finally, Saturday is the day Steve goes back to work after almost a week off so it will be sausage casserole for myself and Jack. Steve likes sausages but not sausage casserole so it makes sense to do this on his first night shift back.

Do you like meal planning? What is on your plan for this week?
