We were recently lucky enough to be sent a variety of products from Baking Mad to try out. Steve is very much the baker of the family but we all pitched in to have a go at making some delicious cupcakes using a recipe from the site and giving it our own little twist too. There are plenty of easy baking recipes on the site and even a guide on how to make cakes.
The recipe we adapted was from this page here although we did make some amendments according to what we had in the house and items we were sent. We also changed measurements as we went along which worked for us. What you will need is:
For the cake
115g unsalted butter, softened
115g caster sugar
1 teaspoon vanilla essence
2 eggs (the recipe specifies large but we used medium and they were fine)
140g self raising flour
1/2tsp baking powder
For the icing
150g unsalted butter
250g chocolate flavour icing sugar
250g ready made vanilla icing
Sprinkles to add on top
-Preheat the oven to 180°/fan 160°, gas mark 4. Line a 12 hole cupcake tin with cake cases.
-Beat the butter and sugar together until light and fluffy. Add the essence, eggs and 1tbsp of flour. Beat until combined, add remaining flour and beat again.
-Divide the mixture into the cake cases and bake for 20 minutes until risen. Leave in the tin to cool for a few minutes, then transfer to a wire rack to cool completely.
-Making the chocolate icing: beat butter in a bowl then add half the icing sugar, whisk until smooth. Add the remainder and beat until creamy.
-Spoon the chocolate icing into a piping bag and pipe the icing onto the cupcakes.Decorate with sprinkles.
-Spoon the ready made icing into a piping bag and repeat as with the chocolate icing. Decorate with sprinkles.
