Creating Some Fun Recipes With Bright Horizons

Jack and I were recently asked if we would like to review a copy of the Bright Horizons family cook book, designed to help families in cooking together. Now Jack loves baking but hadn’t really shown an interest in cooking until recently so we decided to opt for something he had never tried before as our dish – a tasty chicken paella.

Bright Horizons Nurseries have some great resources which not only include recipes but also learning from home activities and so much more. The nearest one to me is St Johns Wood but why not take a look and see what ones are close to you?

We were also kindly gifted £20 to spend on ingredients and a cute doodle apron. So how did we find creating our paella and what do you need?

You need:

1 tsp ground turmeric * 1tbsp olive oil *100g white onion *1 red pepper *450g chicken *300g long grain rice *1/2tsp chilli powder   *750ml water *100g frozen peas

Method:

  • Prep the veg. Wash, peel and dice the onion, dice the pepper. Crush the garlic and heat the oil in a large frying pan. Add the garlic & onion and saute for 3 minutes
  • Dice the chicken and add to the frying pan. Stir in the pepper. Cook for 1 minute.
  • Rinse the rice in cold water, drain. Stir in the turmeric, chilli powder and water. Continue to saute the current frying pan mixture for 1 minute before adding the water and rice
  • Once combined, cover the pan and simmer at a low heat for 15 minutes or until the liquid has been absorbed by the rice. Add the peas and simmer for another 4-5 minutes.
  • Serve

This simple recipe really takes no time at all and is perfect for the whole family. We did have to substitute some things slightly – we don’t have olive oil in the house so used our Frylight and we also reduced the amount of chilli powder slightly due to Jack also eating it but it really is simple to follow and quick to make. Jack enjoyed making it so much he has since helped me make chicken chow mein and is taking a much greater interest in cooking – often poring over recipe books. He’s even chosen a few more meals in the Bright Horizons recipe book that he wants to try such as the Seaside Carbonara and the Crunchy Veg Crumble.

It was super delicious and I think it tasted even better knowing Jack had helped create it.
