Unfortunately I don’t have any ‘in progress‘ pictures as Steve made this. I popped a photo up on Instagram and people asked me to share the recipe over on the blog so here we go…
To start with, we searched for a simple Slimming World friendly BBQ marinade and we came across this recipe from SWOnWorldW. The ingredients and instructions needed for the marinade are shown below but please do check out their site for the full recipe. Steve added a couple of extra ingredients of his own because he loves the flavour of them.
This Slimming World–friendly Hunter’s Chicken, wrapped in bacon and smothered in BBQ marinade and cheese, gets even more flavour with a depth of spice—try adding a few dashes of hatch green chile sauce for that perfect kick.
I have really been enjoying having Steve at home the past few weeks. He is a key worker – he works at a school – but they have been working on a shift basis so he has been home quite a bit recently. Now he has always loved being in the kitchen but at our old house, it was relatively small.
We now have a much larger kitchen and Steve has been in there pretty much every evening, whipping something up for us all. He’s also keen to lose some weight and he knows the Slimming World lifestyle works for him so has been trying to make Slimming World friendly meals.
This dish is syn free except for the cheese you use at the end of cooking. You can use as much as you like (make sure you syn appropriately) but I have suggested 40g which is roughly a Healthy A portion.
You can also choose whatever sides you like for the dish. We opted for homemade mash (with a splash of milk, synned appropriately) and a mixed salad.

Slimming World Friendly Hunters Chicken

A delicious Hunters Chicken style dish that is Slimming World Friendly – minimal syns.
Main Dish
- 8 mini chicken breast fillets
- 8 rashers of bacon with the fat cut off
- 40g cheese, grated (Healthy A or synned)
BBQ Marinade
- 1 onion
- 4 tsp mild chilli powder
- 500g passata
- 4 tbsp sweetener
- 8 tbsp balsamic vinegar
- 2 tbsp Worcestershire sauce
- 1 tsp dry mustard powder
- 2 sprays spray oil
- salt and freshly ground pepper, to season
- 2 cloves garlic, crushed
- 1 inch ginger, grated
For The BBQ Marinade
- Collect all the ingredients together and follow this recipe. Instructions also below.
- Spray a pan with your spray oil, add the chopped onion, ginger and garlic. Fry until soft on a low heat.
- Add the remaining ingredients except the salt and pepper. Bring to the boil then simmer for 10 minutes until thickened.
- Taste to see how much seasoning you need and then season to taste.
For The Dish
- Preheat the oven to 200°C
- Wrap the chicken in the bacon and place in the oven proof dish.
- Once the marinade has finished simmering, pour over the meat evenly.
- Cook in the oven for 30 minutes.
- After the 30 minutes, take the dish out of the oven and sprinkle your grated cheese over the dish. Bake in the oven for a further 10 minutes.

oooh this looks great, you could make big batch of the marinade and use it for all sorts of things.
Would also be great with some sliced potatoes, seasoned and fried in a bit of fry light.
I haven’t tried any slimming world recipes myself. I love that it uses chicken breast as that’s really low calorie and the mix of ingredients of ingredients must make it really tasty.
My husband was only saying the other day about wanting to try Hunter’s Chicken – I must have a go at making it for him 🙂

I love Slimming World recipes as they don’t make you feel like you are on diet and they are healthy at the same time. I have not tried the Hunter Chicken dish but would totally love to try making this
